VITICULTURE:
✋🚜Manual grape-harvest in picking basket with selection of grapes.
VINIFICATION:
⌛Soft pressing of grapes with a pneumatic press (closed tank). Controlled temperature fermentation. The cuvée is bottled in the spring following the harvest. Fermentation in the bottle according to the classic method. Aging “on the yeasts” for approximately 18 months.
