VITICULTUUR:
🌿 The Cuesta del Herrero plots have pudding stones and clay soil with a high calcium component. We take advantage of this composition which enables us to produce fresher wines. Harvest by night. Organic cert.
VINIFICATIE:
🍷 Night-harvested grapes were directly pressed to preserve freshness and aromatic purity. Fermentation began in stainless steel and finished in French oak barrels, followed by approximately six months of ageing on fine lees, enhancing texture, complexity, and balance while respecting varietal expression.
DEGUSTATIE:
👃 Fresh and refined Chardonnay showing bright aromas of white peach, citrus zest, and subtle floral notes, layered with hints of fennel and wet stone from its clay and pebble soils.
👅 The palate is vibrant and precise, with lively acidity, fine texture, and delicate integration of French oak adding light toast and spice. Elegant, mineral, and persistent on the finish
